1) Heat a large heavy deep nonstick skillet over high heat until a drop of water sizzles in bottom. Add oil and swirl to coat pan.
2) Add garlic and stir-fry just until fragrant, about 15 seconds.
3) Add spinach, soy sauce, vinegar and pepper, and stir-fry just until spinach is wilted, about 2 minutes.
