Marinate pork, scallions, half of garlic, half of ginger, soy sauce and sugar for at least 15 mins.
Cook sugar peas and remaining garlic and ginger until crisp then set aside.
cook pork then add sugar peas and thicken with hoisin sauce and corn scratch and water.
Serve over cooked rice.
