Suggest a better description1. Remove the squid's head, slit each squid and peel off the membrane. Rinse and clean the squid. Score the surface of squid and cut into 2 inch squares. Marinate with rice wine, soy sauce, and corn starch for 20 minutes.
2. Clean pea pods. Cut carrot into thin slices 1 1/2 inch long and 3/4 inch wide. Shred green onion into 1 1/2 inch lengths.
3. Heat 1/2 cup of oil, quickly stir-fry squid for 30 seconds; drain and remove to a plate.
4. Heat another 3 T. oil over high heat; stir green onion and ginger for a few seconds. Add pea pods and carrots and salt; toss rapidly for 1 minute. Add squid to these ingredients and stir quickly and mix thoroughly for 45 seconds. Serve hot.
