Suggest a better description1. In food processor, combine oil, cilantro, vinegar, and 2 tablespoons water. Process until smooth. Set aside.
2. Cook grits as directed. Stir in grated gouda cheese to taste. Keep warm.
3. Slice peppers and green onions (reserve some green onion for garnish). Stir fry in a pan coated with cooking spray until tender-crisp. Set aside.
4. Spray shrimp with cooking spray and coat with cajun or blackening seasoning (use more or less depending on how spicy you want the shrimp to be). Grill or stir-fry for 4-5 minutes. Combine cooked shrimp with the peppers and onions.
5. Serve shrimp and peppers over grits. Drizzle with the cilantro pesto (step #1).
6. Garnish with cilantro sprigs, sliced green onion and lemon wedges.
