1] Grease and line a 10cm x 20cm (4 x 8 inches) loaf pan. Preheat oven to 170C
2] Combine flour, baking powder, baking soda and salt in a mixing bowl
3] Combine eggs, sugar, extract and oil. Stir into flour mixture together with mashed banana until well blended
4] Spoon mixture into prepared loaf pan. Bake in oven for 30-40 mins. Turn on to wire rack to cool
- it's better to grease and line the loaf pan to prevent over browning at the sides and bottom of the cake
- bake this cake in a greased and floured 20-cm tube pan
