In a large heavy frying pan combine potatoes, milk, onion and salt.
Bring to a slight boil and reduce heat to low-medium, cover and simmer for about 20 minutes or until potatoes are just tender.
Sprinkle cheese, cayenne pepper and crumbs over the top and cook uncovered for another 10-15 minutes.
Careful to watch it so it doesn't boil over when covered. If you have a deep fry pan that would be best.
