Reserve 8oz of broth and refrigerate until chilled. Bring remaining broth to a simmer.
In a bowl, beat eggs with a whisk. Add parsley, bread crumbs, Parmesan cheese, chilled broth, and nutmeg to the eggs and mix thoroughly.
Add contents of the bowl slowly into the broth whisking constantly. Cook about 3-4min until the ingredients start to float and look done. Add salt and pepper to taste.
This cannot be saved or reheated. It must be eaten immediately. If it is done right, I'll bet you finish every last drop.
