Suggest a better descriptionMash together strawberries and honey in medium mixing bowl, using a fork or potato masher. With electric mixer at medium speed, gradually beat in half of the butter. At first mixture will not seem to be blending well, but it will pull together.
Increase speed to high and whip in remaining butter, continue to beat until mixture is light and fluffy.
Pack strawberry butter into small crock or mold and cover tightly with plastic wrap. Butter will keep in refrigerator for a few days. Frozen it will keep up to 1 month.
TRY THIS: add cinnamon, nutmeg, mace, ginger, basil, thyme, or cloves. Or add ground nuts or finely grated orange, lime, or lemon peel.
Uses: Breads, rolls, muffins, biscuits, pancakes or waffles.
Spread on chicken or fish before grilling.
Use as a spread for sandwiches or canapes. Example: Spread on crackers and top with smoked salmon.
