Combine strawberries, lime juice, and 1/4 cup of sugar in a bowl and set in fridge for one hour.
In a larger mixing bowl, beat eggs until light and fluffy, about two minutes. Gradually add 3/4 cup of sugar, mixing well. Stir in milk and vanilla. Add strawberries with juice and mix well. Gently stir in whipping cream until just combined.
Pour into ice cream maker and process.
Strawberries can be sliced to the size that you want before hand, or you can use a hand blender to pulse the mixture a few times, making smaller pieces of strawberry in the mixture.
If you would like to make strawberry basil ice cream, add 1 cup loosely packed basil leaves that have been finely chopped to the mixture before processing in the ice cream maker.
