I like muffins but strawberries can make you love muffins.
Preheat oven to 400F. In large bowl, combine flour, sugar, skim milk powder, baking powder, and salt. In a medium bowl, beat egg, margarine, and milk until well blended. Add strawberries, lemon juice, and rind. Pour liquid into dry ingredients and stir gently just untildry ingredients are moistened. Spoon batter evenly into 12 lightly sprayed muffin cups. Bake for 15-20 min, or until toothpick comes out clean and they are golden brown.
