Vegan, Less Sugar

1.) Strawberry Filling: Cut strawberries to desired size and add to bowl. Add 1 tbps of sugar to cut strawberries and mix together. Put in refrigerator to chill while making everything else. (Depending on ripeness of strawberries, add more sugar to less ripe berries)
2.) Turn oven to 425°F. Line baking sheet with parchment paper
3.) Biscuits: Sift together the flours, baking powder, sugar, and salt. Make a crater in the middle and add the coconut milk and vanilla. Stir together until everything is combined into a shaggy dough. If you need more liquid, add a tablespoon or two of coconut milk to fix that.
4.) Throw the dough onto a counter top with some flour on it. Pat it into a roughly 8x5-inch rectangle about 1 1/2 inches thick. Don't over work the dough and make it tough. Using a bisuit cutter or open end of a glass, cut out all the biscuits you can (aim for 8). Put them on the baking sheet and bake until the bottoms are golden, 12 to 15 minutes. Let them cool.
5.) Whipped Cream: Take coconut milk out from fridge without shaking it up. Open the can and scoop out all the thick white cream on the surface and put it in the (chilled) bowl. Sift in the powdered sugar so that there aren't any chunks and add the vanilla.
6.) Beat on medium-high speed until it starts looking all fluffy and whipped, 1 to 2 minutes.
7.) To assemble the shortcake, cut the bisuits in half like 2 layers of a cake. Layer the strawberry filling on the bottom half, add a scoop of whipped cream, and put the top half of the biscuit back on. Add another layer of strawberries and whipped cream on top and serve right away.
