Marinate Flank Steak in 3 T of Olive Oil, juice and zest of 1 Lime, the cayenne pepper and cumin. I like to marinate overnight but even 1 hour will do.
Grill the steak to get char. Cut against the grain in bite-sized portions.
Garnish with onion, corn, pico de gallo, sour cream and a squeeze lime juice.
