1. Preheat oven to 450(F) degrees.
2. Beat eggs with milk. Sift flour together with salt and stir into egg mixture. Beat the batter until well blended.
3. Discard most of the fat from pan in which beef was roasted (or preheat a pan with bacon drippings or clarified butter in it until very hot. Fat will be swirling in pan) about 1/4 cup of fat. More if you double or triple the recipe.
4. Pour the pudding mixture into pan and bake at least 10 minutes on high. More if you double or triple the recipe. Reduce temp to 350(F) and bake 15 to 20 minutes longer (again more if you double or triple) until the pudding is puffy and delicately browned. Cut into squares and serve. About 4 servings per recipe.
