Ohh, this is so good. Frequently had this growing up on speciall occasions.
In large frying pan, saute onions in 1 Tbsp margarine til transparent. Add mushrooms and meat and saute til meat loses pink color, stirring til crumbly. Turn into a large bowl and season with salt, pepper, oregano and garlic, let cool slightly. Break eggs and mix lightly. Then mix in cheese, parsley and crumbs and chill.
Take 6 sheets of filo (keep remainder covered with plastic wrap) and overlap them to make a 15x24 inch rectangle(arrange layers to distribute as evenly as possible). Brush lightly as you go with melted butter so layers stick together.
Spread cool filling over filo to within 1.5 inch of long sides and 3 inches of each end. Fold the 1.5 inch edges over filling. Then fold one of the 3 inches edges of filo over meat and continue rolling up like a compact jelly roll. Lay out 6 more sheets to make a 15x24 inch rectangle, brush with margarine and fold in long sides 1.5 inches. Set meat roll across a narrow end and roll up. Brush with remaining margarine and place on a 10x15 inch baking pan.
Bake in 375 F oven for 30-35 minutes or til roll is golden brown (if made in advance, chill covered; reheat in a 375 F oven for 30 minutes). Transfer to a serving platter or board. Cut in 1 inch slices. Serves 10
