Italian Christmas cookies and a favorite growing up.
* Combine the flour, salt and eggs in a mixing bowl and knead until smooth, allow the dough to rest for 15 minutes.
* Divide the dough into six pieces.
* Lightly flour your work surface (board or counter-top) and roll each piece into a long rope about the size of a dime.
* Cut the ropes into one inch pieces.
* Heat the oil to 350 degrees.
* Fry the pieces until they are golden brown.
* Transfer pieces to brown paper to drain off excess oil.
* Combine Honey and Sugar in a saucepan over low heat. Add the drained pieces and stir to cover evenly with the honey and sugar mixture.
* Transfer the honey coated balls to a dish, on top of each other and sprinkle with colored sprinkles.
