Sweet honey pastry balls with almonds and rainbow nonpareils
Sift flour and salt together. In the kitchen-aid stand mixer with dough hook attachment, add butter to flour mixture while blending on low. Beat eggs and yolks lightly. Slowly add eggs to flour mixture while blending on low. After dough has been formed, add lemon rind and 1 orange rind to mixture and blend a bit more on low until well blended.
Remove dough and put in a bowl. Let it sit with a cool damp cloth over the bowl for 1 hour.
Heat oil to 375 in deep fryer or frying pan. Break off pieces of dough and form small balls (size of roughly the tip of your pinky). When oil is hot, add enough balls that container can handle, but not too many that they'll stick together. Fry until golden brown. Remove and drain on paper towels.
Toast almonds in oven until slightly golden. DO NOT BURN!
Bring honey to a boil (until it foams). Turn off heat. Add struffoli and almonds to the honey. Toss until coated. Remove with a slotted spoon and place on serving platter(s). Arrange into a dome. Sprinkle generously with rainbow nonpareils.
