Suggest a better descriptionCook brown rice. Preheat oven to 400 degrees F. Cut bell peppers in half length wise. Discard seeds and membranes. Cover the bottom of a casserole dish with tomato sauce and place bell peppers on top, open side up. In a pan sautee the onions in oil until translucent (5-7 min). Add minced garlic and cook for 2 more minutes. Add ground turkey and cook until brown. In a large bowl combine the ground turkey, brown rice, diced tomatoes, and salt and pepper to taste. Fill each of the bell peppers with the mixture. Cover and bake for 30 minutes. If desired, sprinkle with cheese while hot.
Alternative: use taco seasoning and beef
