Stuffed chicken parmesan with spinach and cheese
Heat up the 1 tbls of olive oil in a pan on medium to low heat.
Preheat oven to 400°F
Add spinach and garlic until spinach is wilted.
Cut each chicken breast down the side and place in cheddar cheese (your preference)
Then add spinach until stuffed.
Beat the eggs.
While holding the chicken breast together turn to coat in egg.
Once coated repeat in bread crums.
On medium heat add olive oil and cook chick breast on both sides (about 3 minutes on each side)
Once crispy place on baking sheet.
Cook 400°F for 20 minutes (time may vary)
Once done place a slice of mozzarella on top.
Service with your favorite pasta and red sauce.
