Place steak in plastic ziplock bag with honey and soy sauce to marinate overnight.
In the morning, combine feta cheese, garlic, green apple and almonds in a bowl. Pour steak and marinade into the crockpot stoneware. Remove meat and place on a cutting board. Put a handful or two of the filling in the middle of the steak and roll it up. Return meat to the crockpot, seam-side down. Cover and cook on low for 6-7 hours, or high for about 4 hours. Slice carefully and serve.
