Flat Iron Steaks are delicious by themselves but can be made even better when stuffed with mushrooms, shallots and blue cheese before being grilled.
Saute the chopped mushrooms and diced shallots with the butter until tender. Set aside and allow to cool.
Pound the flat iron steak until it is roughly 1/2 of an inch thich and has almost doubled in size.
Mix the mushrooms and shallots with the blue cheese and spread evenly across the flattened steak.
Roll up the steak and tie with twine.
Grill the steak with indirect heat for about 40 minutes until an internal temperature of 135F is reached.
Let the steak rest for 15 minutes, slice and serve.
