This breakfast casserole has great texture and flavor.
Beat together cream cheese and 1 teaspoon vanilla until fluffy. Stir in nuts. Cut bread into 10 - 12 1 1/2 in. slices. Cut 2 Pockets in each slice. Fill with 1 1/2 tablespoons of cheese mixture. Beat together eggs, whipping cream, 1/2 teaspoon vanilla and nutmeg. Dip bread slices into egg mixture. Brown on lightly greased griddle. Mix apricot preserves and orange juice. Cook until smooth. Drizzle on hot toast.
