Best baked fish you ever had
Preheat oven to 400 degrees
Rinse Haddock and pat to dry, set aside and let come to room temperature.
Salt and pepper fillets.
Blend mayonnaise, 1/2 stick soft butter, and mustard, add bread crumbs, panko, italian dressing mix and parmesan. Mix well, should have consistency of mashed potatoes. Set aside.
In small iron skillet melt rest of butter in oven. When butter is melted, remove from oven and place lemon rings in the butter. Place haddock on lemon slices and smear mayo mixture on top of haddock. The mixture should be about 1/2" thick.
Cook in 400 degree oven for about 20 minutes or until fish flakes and stuffing is nicely browned.
