Try this Stuffed Mushrooms (Vegetarian) recipe, or contribute your own.
Suggest a better description- preheat oven for 350
- remove stems of mushrooms, and scoop out the insides
- chop up/dice stems of mushrooms, onion, tomatoes (sun-dried or oven roasted - whichever you chose to use)
- heat skillet on medium heat and saute above for a couple of minutes until onions are translucent and tomatoes are
tender (if using sun-dried tomatoes, you may need to saute them a bit longer)
- add garlic after a couple of minutes
- add spinach after another minute or two, and let wilt
Once spinach is wilted...
- take mixture and place into bowl, and add seasoning (pepper, salt, panko crumbs, basil, and italian seasoning)
- add the pecorino cheese as well, but leave enough to sprinkle on top of the mushrooms once stuffed.
- Once well combined, stuff mushrooms
- I like to brush the insides or outsides of the mushrooms before I put in the oven (or before i stuff them if brushing the inside)
This will help prevent them from being too dry, even though mushrooms have a high water content to begin with.

- Bake in oven for 20 min or so, until the mushroom cap is tender. If mushroom cap seems dry and hard still, throw them in for 5 more minutes.
