Remove as much of the stem from each mushroom as possible. Reserve the stems and wipe down the mushrooms with a damp paper towel. Brush each cap top (not the cavity side) with olive oil. Line up on a baking sheet and place under a hot broiler for 3 to 4 minutes, or until they begin to sweat a bit and brown. Reserve the liquid. Clean and chop the stems.
Heat a heavy skillet over medium-high heat. Remove the Italian sausage from the casing, crumble it and fry it until it is well browned. Add the shallots and chopped stems and drop the heat and cover, stirring occasionally. Reverse the mushroom caps, and when the shallots and stems are cooked through, add the oregano, reserved mushroom juice and cream cheese and remove from the heat, letting the cheese melt in the residual heat from the mushrooms.
Once it is evenly mixed, use a small scoop or tablespoon to fill each cap, rounding the top slightly. Sprinkle with grated cheese, and at this point you can cover them with foil and refrigerate them.
When ready to serve, heat the broiler, remove the foil and broil them for 4 to 5 minutes, checking carefully. Because they will be different sizes, cooking time will flucuate for each mushroom. . Be ready to take half of them off to a serving platter and let the others have another minute or two. Cook until golden and bubbly.
