Preheat oven to 350
Bring a large pot of water to a boil, cook pasta (slightly under cooking) and cool pasta to room temperature with cold water or an ice bath immediately.
Mix 1/2 the cheeses, all the ricotta, eggs, and Italian seasoning. Line baking dishes with small amount of sauce to avoid sticking. Stuff the pasta with the cheese mixture. Mix other 1/2 of the Parmesan cheese, sauce, and mushrooms. Pour over pasta. Top with the rest of the mozzarella cheese and bake for 40 minutes.
