1) Rub potatoes with a drizzle of olive oil and pierce with a fork. Microwave on high, 12 minutes or until tender. Cool potatoes 5 minutes, then split down the center and scrape potato flesh into a bowl. Set skins aside on a nonstick baking sheet. Preheat broiler to high with oven rack 6" from heat sources.
2) While potatoes are in the microwave, heat a small skillet over medium heat. Add 1 tbl. olive oil and saute shallots until just tender, 2-3 minutes.
3) To the cooked potatoes in the mixing bowl, add shallots, ham, cheese, butter, half-and-half, thyme, salt and pepper. Mash with the potato masher until mixture is combined, but not entirely lump-free. Divide mixture evenly among skins and broil to lightly brown on top, 2 or 3 minutes. Serve 2 halves with a green salad, dark bread, and butter.
