Fantastic dish from Turkey, served one sheeps head per person. No appetizer needed for this dish. Serve as any evening date
Turn oven on to 425
The stuffing is mixed together in a separate pan. Be sure to completely stuff the underside of head. The head is kind of heavy so there will be no need to tie the head. However if you choose to twine tie the head..do so that that the jaw and eyes are not interfered with forks during dining.
Place Sheep heads directly on a metal pan, drizzle liberally oil with olive oil. Do not remove any meats, fats, brain, eyes* or teeth. Pluck any extraneous whiskers or wool from head. If you have any optional pieces of sheep meat.. place delicately in sheep head along with prepped Sheep Head Stuffing. Place heavily pricked whole potatoes, directly on pan around the head...
(Stuff hard boiled eyes into Sheep Eye sockets IF the head do not come with sockets after cooking or if eye shrinks into orbits.)
COOKING:
Cook in oven for at 425 for 25 minutes.
After 25 minutes lower oven to 325 for 1 1/2 hours, loosely cover with foil.
Remove.. let rest for 20 minutes
Could be drizzled with bbq or sweet sauces
