Preheat oven to 425*. Core two packages of Campari tomatoes, approx 7-8 tomatoes in each pack. Dice uncooked bacon and sauté in pan. Combine Parmesan and cream cheese in bowl. Add cooked bacon and black pepper. Stuff each tomato with mixture. Place in greased casserole dish. Back for approx 15min or until stuffing begins to melt. Serve warm or chilled.
Variations including chives, dry ranch mix, or BBQ seasoning also work well.
If Campari tomatoes are not available, try cherry or Roma tomatoes. Ingredient amounts may need to be adjusted slightly depending on which.
