These easy-to-make gourmet grilled cheese sandwiches cook on the barbecue in minutes and are always a hit, especially with the teenagers in the group. Makes 18-24 pieces.
1. Place tortillas flat on work surface. Cover each of these tortillas with a thin layer of salsa.
2. Combine remaining ingredient and mix well. Spread 1/3 of the mixture on top of the salsa on each tortilla. Top each with one of the remaining tortillas to cover filling.
3. Grill over medium-high heat for 6-8 minutes, turning halfway through (you'll need 2 spatulas), until tortillas are lightly browned and cheese has melted. Remove and cut into wedges.
Tips: These tortilla sandwiches can also be baked in the oven. Place on baking sheets and back at 350 deg. F. for about 10 mins, or until cheese melts.
