stuffed onions
Preheat oven to 400. Cut 1/2" slice off top of each onion, and thin slice off bottom. Using a spoon, scoop out center of onions, leaving outer 2 or 3 layers; reserve onion centers. Place onions in a glass dish with 1/2 cup of water. Cover with foil and bake for 25 minutes.
Chop enough reserved onion to yield 1 cup. In a medium skillet heat oil over medium heat. Add bacon and saute for 30 seconds. Add onion and saute until onion begins to brown. Remove from heat and stir in spinach, sage, and salt. Transfer to bowl and stir in breadcrumbs and cheese.
Remove onions from baking dish and drain water. Reduce oven to 350. Stuff bread crumb mixture into cavity of each onion, mounding on top. Return onions to dish and bake from 20 minutes until thoroughly heated.
