A spin on a thanksgiving/Christmas dinner favorite! Excellent idea for an appetizer!
Preheat oven to 375 degrees. Melt the butter in a pan over med heat. Sauté the onions, celery and apple. Add in the bacon and mushrooms once other vegetables have become soft. Continue cooking until mushrooms have softened.
Have bread ready in a large mixing bowl with spices, salt and pepper. Gently mix in cooked vegetables until well incorporated. Mix in water and 2 eggs until well incorporated.
Have a baking sheet lined with tin foil ready to go. Start forming small balls (about the size of an ice cream scoop). Water your hands to help form the balls. Place formed balls on the baking sheet. Bake for 20 minutes.
* Hint: you could use packaged stuffing and just add your own vegetables. Just add the eggs at the end to help bind the ingredients
* Note: you can change the combination of vegetables/fruit to suit you. Try adding nuts, pumpkin seeds, cranberries...the choices are endless!
* for extra decadence: add a tiny dollop of butter on top of each stuffing ball prior to baking
