These are the best sugar cookies ever. Don't omit the lemon extract, it makes the cookie!
Beat shortening and 1 1/2 cups sugar at medium speed with an electric mixer
until fluffy. Add eggs and flavorings, beating well. Beat in flour,
baking powder and salt. Cover and chill dough at least 30 minutes.
Shape dough into 1-inch balls; roll in 1/4 cup sugar. Place on ungreased
baking sheets. Bake at 350 degrees for 8 to 9 minutes or until barely
golden. Cool 2 minutes on baking sheets; remove to wire racks to cool
completely.
These are great for holidays rolled in appropriate colors - green for St. Patty's Day, pink or red for Valentine's Day, etc.
