Make this simple compote once and you can enjoy this season's most succulent berries again and again.
Use half of this compote to make glazed berry tarts and store the other half in the fridge for up to a week or in the freezer for a later date. Freeze portions in ice-cube trays and store them in a bag, to use when needed.
MAKES ENOUGH FOR THE TARTS, PLUS ENOUGH FOR 2 EXTRA JARS.
Hull and quarter 800g of strawberries and put into a pan. Add 200g of raspberries, 8tbsp of sugar and the juice of 1/2 lemon and heat gently until all the sugar has dissolved. Increase the heat slightly and leave to bubble gently for 25 minutes, stirring occasionally.
