Fantastic rub for beef or lamb. Quick and easy to make either last minute or in advance. Recipe quantity is for 2 racks of lamb.
1. In a dry skillet over medium heat add tomatoes, garlic and shallot. Toast the mixture, stirring often, for 5 minutes. Add salt and pepper. Toast for an additional 10 minutes or until mixture browns slightly. Remove from heat and cool.
2. In a blender, pulse mushrooms to fine powder. Add tomato mixture, pulsing until well combined. Add dry herbs and pulse several times until mixture is well combined.
3. Coat meat as far in advance as possible although it still very good if done just before cooking.
