Heat olive oil in skillet. Add chicken and cook through (cutting into bite sized pieces as it cooks.) Add taco seasoning and 2/3 cup water to skillet with chicken and heat on medium for 5 minutes. Add Rotel and black beans to skillet. Add skillet ingredients with cooked rice into large bowl and mix well. Serve in bowls and top with desired shredded cheese and sour cream.
