For this recipe, we will be using two separate recipes and combining them together.
BRANDIED OVEN CRANBERRIES:
875 grams of cranberries (7 packs of 125g)
2.5 c sugar
2/5c (almost 1/2 c) brandy
Place cranberries in a single layer on a lightly greased cookie sheet covered with foil.
Pour sugar on top.
Cover with foil and bake at 350 F (175 C) for 1 hour.
Spoon cranberries into a serving bowl and add in brandy.
375 grams of cranberries (3 packs of 125g)
5/8 c of maple syrup
2/5 c brandy
2/5 c sugar
zest and juice of an orange
dash of cinnamon, ginger and cardamom
Combine all ingredients in a saucepan. Bring to a boil, stirring to dissolve sugar.
Reduce heat to medium. Simmer for 4 minutes, stirring constantly. Remove from heat.
Use a slot spoon to remove 1/2 cup of whole cranberries for garnish (if you want). Continue simmering remaining berries, stirring constantly, until all berries have popper and sauce is a velvety juice (about 6 or 7 minutes more).
Strain through a sieve to remove skins.
Once cooled, combine the two recipes and store in the fridge until ready to serve.
These can be stored for up to a week and a half in the fridge!
I used less brandy than the original recipe called for.
Also, it is not necessary to do the sauce. on the stove part. You can get away with just doing the ones in the oven!
