Suggest a better descriptionThe surprise is a cube of cheese in the centre of each burger. Use mozzarella, Italian fontina, soft goat's cheese, feta or a soft blue cheese such as Stilton or Gorgonzola.
1. Fry the onion in the oil until brown and crisp; add the garlic towards the end of cooking.
2. Leave to cool, then mix with all the remaining ingredients except the cheese. Divide the mixture into 4 equal quantities and shape into burgers approximately 100 mm in diameter, enclosing a piece of cheese in the centre of each one. Cover and chill in the fridge for a t least 30 min.
3. Cook the burgers on the hot BBQ rack over a medium heat for 6-7 min each side.
4. Assemble in burger buns with your favourite burger fillings.
