Suggest a better descriptionSushi is best w fresh cooked rice. 2 c dry rice should make about 3.75 c cooked rice. While rice is till hot, gently mix in the vinegar mix and allow to cool enough it isn't steaming.
To make a roll, place nori shiny side down on sushi mat. Put a thin stripe wasabi and mayo side to side. Using wet fingers, put 1/3 to 1/2 c rice, and spread out, leaving about 1 inch clear on the top. Place your choice of ingredients in side to side about 2" from bottom. Gently roll, lifting the upper edge of the mat out of the way. Gently squeeze full roll, unroll, and use sharp knife dipped inwater to slice.
Serve with pickled ginger, wasabi, siracha mayo, tamari, or your choice.
