6. Creamy carbonara sauce – Free
Serves 2. In a bowl, mix together ½ tub plain quark, 2 egg yolks, 30g grated fresh Parmesan (Healthy Extra ‘a’ choice), 1 crushed garlic clove and lots of cracked black pepper, and stir well.
Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add 4 rashers smoked bacon (visible fat removed), a handful of sliced chestnut mushrooms, 1 diced onion and a pinch of thyme and fry for 5-8 minutes, or until the bacon is cooked. Reduce the heat to very low and add the quark mixture, 50ml water and your favourite cooked dried pasta. Stir well to coat the pasta. Divide between 2 bowls, sprinkle with chopped fresh basil and divide over 30g grated fresh Parmesan (Healthy Extra 'a' choice).
