Preheat oven to 175 Degrees Celsius (gas mark 3-4)
1: Beat egg white, little amount of ground almonds and a little amount of caster sugar until stiff and firm.
2: Fold in the rest of the ground almonds and caster sugar.
3: Cook in a greased dish (one with a removable base would be easier to remove it later) for 40-45 minutes.
1: Whilst the base is cooking, blend together the yolks, sugar, cream and flour in a saucepan, so that there are no lumps (as best you can)
2: Put the stove on the lowest setting and keep stirring - this easily burns and it the most time consuming part.
3: When it is thick and bubbling slightly, (approximately 20 minutes or so), turn up the heat a little to thicken a little more - but keep stirring!
4: Take off the heat and add the cubed butter to cool the topping and thicken it further.
In this time, the base has probably cooked. Wait for this to cool, but don't wait for too long as the sauce won't be so pourable.
There are now one of two things you can do;
1: Cut the base in the middle, put the bottom half in a suitable dish (the sauce will run, so use something with sides) and pour in some of the sauce, put the top half on and pour the rest of the sauce over the entire cake.
2: Just pour all of the sauce on the top.
Decorate by sprinkling some almond slices on the top!
