For the Lutefest dessert tray.
Beat eggs, salt, sugar and vanilla until blended. Add flour and milk alternately into the egg mixture, stirring after each addition. Add vanilla.
Put vegetable oil into an electric skillet to a depth of 2 1/2 inches. Heat oil to 325?-350?.
Heat rosette iron in the hot oil. Then dip into the batter just to the top of the iron. Batter will stick to the iron. Place the iron into the hot oil holding it above the bottom of the skillet. Batter will fall off the iron. Fry rosette until golden. Repeat until batter is gone. Drain on paper towel. Sprinkle with confectioner's sugar.
