1. Peel potatoes; cut into very thin slices (about 1/16 inch thick). Place potatoes in a large bowl of ice water; soak for 10 minutes. Drain potatoes; pat dry with paper towels.
2. Meanwhile, in a deep-fat fryer heat oil to 350F. Fry potato slices, half at a time, in the basket in deep hot oil for 3 to 5 minutes or until crisp and golden. Do not crowd. Be cautious of splattering oil. Maintain oil temperature around 350F. Remove potato slices form hot oil; drain on wire racks.
3. Sprinkle with salt. Store in an airtight container at room temperature for up to 2 days.
