Heat 2T cooking oil in frying pan.
Mix ground beef with garlic, salt and pepper, shape into 36 balls.
Beat eggs with flour, salt and pepper.
Dip meatballs in batter and place in frying pan, turning to cook all sides. Add more oil with each batch. Scoop onto paper towel.
To pan, add chicken stock, red peppers, pineapple chunks, simmer for 5 minutes.
Place meatballs gently back in pan.
Mix cornstarch, sugar, pineapple, juice, cider, soy sauce, add to pan and toss when starts to thicken.
Chop tomato and add to pan
Serve over cooked rice.
You can add snow peas or other vegetables
