Today's pork is lean, delicious, and a joy to cook with-especially when it ends up in this tangy, fruity Asian-inspired sauce. We love to serve it on nutty brown rice to really bring out the complex flavors.
1. Combine sherry, pepper, soy sauce, and sugar in medium bowl. Add pork and gently toss until well-coated. Let marinate in refrigerator.
2. Stir together pineapple juice, ketchup, vinegar, remaining tablespoon of soy sauce, and sugar in a small bowl until well-blended.
3. Heat 1 tablespoon of oil in a large, non-stick skillet over medium high-heat until hot but not smoking. Add onion and cook, stirring occasionally, until browned but still a little crisp, about 2 minutes.
4. Transfer to a large dish. Heat another tablespoon oil in same skillet over medium-high heat until hot but not smoking. Add peppers and cook, stirring occasionally, until browned but still a little crisp, about 3 minutes. Transfer to the same dish.
5. Heat remaining tablespoon of oil in same skillet over medium-high heat until hot but not smoking. Add pork cubes in single layer. Cook until golden brown crust forms on bottom about 1 1/2 minutes. Return onion and peppers to the pan and toss to combine. Add pineapples juice mixture and cook, stirring, until sauce evenly coats everything and thickens slightly, about 2 minutes. Serve afterwards.
6. To make brown rice: In saucepan, bring stock to a boil and add rice. Cover with lid and let simmer for 20-30 minutes. Fluff with fork.
