Heat the oil in a large skillet over high heat. Reduce the heat to medium, add the beets and a hefty pinch of salt, cover, and cook for 5 min. Add the balsamic vinegar, stir well, and cook, covered and stirring occasionally until tender, 6-8 min. Add salt and pepper to taste.
