1. In a large skillet with olive oil, cook chicken on high heat. Add veggies and garlic. Cook and stir for 3 to 5 minutes or until chicken is lightly browned.
2. Add remaining ingredients; cook an additional 2 minutes or until chicken is cook through ang vegetables are crisp / tender.
3. Serve over hot cooked rice.
DO NOT subsititue rice for noodles.
