Heat grill to medium high direct heat.
Grill wings for 7-9 min per side until crispy and completely cooked.
Combine butter, mustard, hot sauce vinegar, Chile powder, Worcestershire sauce, pepper in a large sauce pan set over med heat. Taste for seasoning. Allow sauce to come to a simmer, once sauce is simmering, cut the heat and add wings and toss thoroughly in sauce. Remove to a platter and sprinkle with green onion(optional) serve with smoky blue cheese dipping sauce.
SMOKY BLUE CHEESE DIPPING SAUCE:
Mash the blue cheese with a fork into the buttermilk and sour cream in a small bowl. Thorough breaking it up. Pour in the vinegar, paprika, and green onion and mix well. Season with salt an pepper cover with plastic wrap and let rest in fridge for at least 30 min so flavors can marry. Serve.
