Method -
1. Wash and peel off the raw mangoes. Cut them through the core into big pieces. Throw away the seeds
2. Dry roast the whole spice mix and crush them with a mortar.
3. Mix mango pieces with Turmeric powder, chilli powder, salt and crushed whole spices in a large bowl.
4. Let it marinate for 1. 5 hrs. Approx.
5. Now add the sugar or Jaggery powder to the mango pieces and let it rest for another 1/2 hr.
6. The sugar will start dissolving and pieces will start leaving water by this time.
7. Heat a large pan (kadhai) and add the pickle mixture on a slow flame and let it cook for 1 hr or so. Keep stirring in between.
8. Check the consistency of the sugar syrup. It should be sticky and the mango pieces should look translucent.
9. Let it cool down before you transfer it into a jar.
The proportion will be around 1 litre of a jar.
The sweet and Spicy Mango pickle is ready to served as an accompaniment with parathas, phulkas or bread. It can stay outside fridge for months but it tends to get finished soon as it's loved by all.
