Dumplings: Combine maseca, broth, butter, corn, and SAUTED onions, garlc, sugar, baking powder, salt and white pepper in stand mixer with paddle attachment.
Fill dumplings with 1 tablespoon of mixture using water to seal (1/2 moon pleat).
Heat 1 tablespoon of vegetable oil over medium-high heat. Cook 1-2 minutes until golden brown. add 1/2 cup water and close lid.. cook until water has been absorbed.. 4-5 minutes... remove lid and cook until water has evaporated.
