For those who like octopus this recipe will make them love it!
Put together the octopus tentacles. the 3 tablespoons of white vine vinegar, the glass of wine, the peppercorns and the bay leaf in a large pan over maximum heat.
Don't add any salt or water! The Sea-as my mother said-had already contributed to the saltiness, and the water is provided by the octopus itself, as its body is more then 80% water.
Bring to boil and then turn the fire in half and continue boiling for 40-45 minutes without removing the lid.
Remove the octopus and keep its juices.
On a very hot fry pan add the olive oil and the octopus tentacles and let them fry for 2-3 minutes each side.
Add the red onions and the garlic in slices and let them saute.
Add the octopus juices and let them boil for another 2-3 minutes, until the onions absorb all the juices and get light brown.
Add the balsamic vinegar and allow the acidity to evaporate.
Add the cherry tomatoes and the honey and let them boil for another 2-3 minutes.
Remove from the fire and garnish with fresh continental parsley, just before serving.
It serves with Greek Melitzanosalata (Eggplant salad), eggplant mash or just a rich Greek salad
with olives and oregano.

Do not over boil the octopus.It will taste like chicken!
The longer you fry the octopus the more crispiness it gets!
